Peter J. Skogström is a well-reputed caterer, usually taking on big events. Working with quality products that both enhance the atmosphere and brings functional solutions for presenting the food is important to Peter.
To set the image, the tone at your catering event or restaurant, you have to work on creating atmosphere.
“Colours and lighting are very important, but also the staff and of course the guests! Duni has many great products that can enhance the atmosphere. All the candles of course, but I also work a lot with the Duni Amuse-bouche® series, a collection of transparent, miniature forms made for small mouth delights. I think it’s easy to create atmosphere around these products, in the sense of their shapes and also to create a colourful and culinary feeling.”
Peter talks about a strong trend in the restaurant and catering business right now, an awareness that runs through everything. The guests want a complete experience where honesty sets the tone. He has followed this trend the past few years.
“People are getting more and more aware all the time, asking for organic and locally produced food. But they also want to go to a restaurant that has an overall warm and friendly tone. The room, the lighting, the food, the staff: it should all fit into this image.”
The title “Swedish Chef of the Year 2006” was awarded to Peter J. Skogström for creations which, in the opinion of the judging panel, are “Bold and ingenious! Soft, lingering flavours and outstanding technique”. He has been running his own restaurant “Mat & Vin på Stolpaberga” in Bunkeflostrand outside the city of Malmö in southern Sweden since 2000. Today he also runs Restaurant P2 in Malmö, and the company Smarta kök. As part of the Swedish National Culinary Team, Peter has won gold medals in the World Culinary Championships and Culinary Olympics.
